Honey Walnut Cake Roll
1/3 cup sugar
1 cup of Honey
1 tea spoon vanilla
1 tea spoon of baking powder
1 cup flour
1 cup of chopped walnuts
2 sticks of butter
1 can of Dolce de Luche
CREAM FOR TOPPING :
1/2 cup of whip cream
1/2 a package of cream cheese
1/2 cup of powder sugar
9 oz of bittersweet chocolate
1 cup of heavy cream
Make sure all your ingredients are at room temperature before u start baking .
Instructions: Preheat oven to 350
Toast walnuts and set aside to cool. in the mixer beat 5 eggs till they are fluffy. At medium speed Slowly add sugar, honey , vanilla, and baking powder. Once all combined after 2-3 min turn mixer off. Sift 1 cup of flour using spatula slowly mix .
Butter a 13×18 baking sheet and put parchment paper on, transfer the batter and top it with walnuts. Bake for 30 min
Once it’s baked transfer from the baking pan on to a kitchen towel ( make sure all the side are loose so you don’t tare it when taking it out of the pan)
Top the walnut side with a damp paper towel and start rolling it than let it cool .
Start making the cream. With a mixer cream butter and dolce de luche ( make sure butter is soft before u do it , don’t use the microwave to soften butter this will cause uneven temp in butter and can cause butter lumps in your cream ) unroll the cake and spread the cream than roll it back up . Set in fridge while you make the chocolate ganache. Heat heavy cream and pour over chocolate mix till chocolate is dissolved. Pour over the cake roll and put it back in fridge for chocolate to harden.
Make the topping cream : cream together heavy whipping cream , cream cheese and powder sugar until u have stiff peaks . Take out the roll and cut the edges off transfer it to a serving platter and decorate it using a piping bag and cream. You can top it with more walnuts( optional)
