This hachapuri doesn’t have yeast therefore doesn’t require hours of waiting for the dough to rise. It’s one my husbands favorite things to have for breakfast.
1 cup of Kefir or Buttermilk
1/2 tsp of salt
2 tsp of baking powder
1/2 tsp baking soda
2 tea spoons melted butter
2 cups of flour + extra for rolling
8 oz of feta
1 cup of Mexican cheese mix
1 tsp of pepper
( no need to add salt , cheese already has lots of salt in it )
Whisk egg and kefir ( or buttermilk ) add the rest of the ingredients, form the dough into a ball, cover plastic wrap or kitchen towel and let the dough sit for 10 min
Mix together all the cheese mixture ingredients and divide it in 4 -6 equal portions.
Divide the dough in 4-6 balls. Roll one ball out and add cheese mixture. Pinch it back together tightly into a ball pinching all the sides together. Dust it with some flour and Roll it out into a flat circle shape, always adding more flour so it doesn’t stick to your Rolling pin . Should be around 6in wide no more than that . Repeat for each ball of dough .
Heat a frying pan with some oil and fry the hachapuri on each side till golden brown on medium low heat about 2-3 min per side . You can eat it hot or cold . Enjoy !!
