Banana Bread Muffins

These muffins are so good and so easy to make.


• 4 ripe bananas

• 1 1/4 cups of sugar

• 2 eggs beaten

  • 1/4 cup of buttermilk ( or sour cream)

• 1 teaspoon vanilla

• 1/2 cup vegetable oil

• 2 cups flour

• 1 teaspoon baking soda

  • 2 tsp of baking powder

• 1/2 teaspoon salt

• 1/2 cup toasted chopped hazelnuts or nuts of choice

• 1/2 cup bittersweet chocolate chips

• 1 package cream cheese softened

• 1/2 cup powder sugar


1. Preheat oven to 350.

2. Grease muffin pan or set cupcake liners

3. In a large bowl, mash bananas.

4. In a separate bowl, beat eggs and then add to mashed bananas.

5. Add  sugar and oil to the banana mixture.

6. Stir together dry ingredients and add to banana mixture. Add chocolate and toasted nuts. Mix well.

7. Pour into muffin pan 3/4 full.

8. Mix cream cheese with powder sugar.

9. Using a spoon, spoon cream cheese mixture into each muffin

10. Bake for 20 min

I never gave up and my husband can tell you I had my share of bad cooking. The more I practiced the better I got. Now we are going on 10 years of happily married.
