Mini Meringue Cakes

I saw something similar on Food-network and decided to make some what of a copy cat. And it is so good.

Left over cake crumbs or u can use cookie crumbs. I used chocolate cake crumbs

3 eggs whites

3/4 cup sugar

1 tb spoon of vinegar

1 package cream cheese

1 cup of powdered sugar

1/2 cup or whip cream or cool whip

Melted Chocolate for decoration

Instructions:

When ever I make a cake, I cut the uneven top and crumble it. I freeze it for a later occasion I can use or use it that day for something else.

Making meringue:

Beat egg whites at room temperature, when the eggs begin to foam slowly start adding sugar after beating for approximately 7 min add spoon of vinegar and beat till peaks are stiff. Feel with your fingers, you should not feel any sugar crumbs.

Pipe round ball shapes onto parchment paper and bake at 300 for 2 hours . Let the meringue cool before removing from the oven.

Cream: beat cream cheese , powder sugar and whip cream.

Assembling :

Take one meringue and spread cream on the bottom part. Top it with another meringue. ( two flat bottoms touching. It should almost look like a ball) spread cream all over the meringue and roll it in cake crumbs. I use cupcake cups to place them in for not falling over. You can decorate the tops with rose piped cream and drizzled with chocolate.
