I found this recipe in a cookbook I bought years ago , I have tried many different chocolate chip cookie Recipes and this one is the winner. I have tweaked a few things but the recipe is very simple and delicious.
Ingredients:
2 cups of all-purpose flour
1 teaspoon salt
3/4 teaspoon baking soda
2 sticks unsalted butter, at room temperature
1 cup sugar
2/3 cup (packed) brown sugar
2 teaspoons vanilla extract
2 large eggs
1 cup bitter sweet chocolate chips
1/2 cup of butterscotch chocolate chips
1/2 cup macadamia nuts
1/2 cup Fine chopped and toasted walnuts
1/2 cup toasted and Fine chopped hazelnuts ( optional)
Instructions:
Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
Whisk together flour, salt and baking soda.
Working with a stand mixer, beat butter at medium speed, add sugars. Beat for 2 minutes than add eggs one at a time, 1 min apart. Beat in vanilla. Reduce the mixer speed to low and slowly add the dry ingredients in 3 portions making sure it is well incorporated. With a spatula mix in nuts and chocolate. You can use a tablespoon to scoop slightly rounded cookies onto the baking sheet. I use the smallest size ice cream scooper. Leave 2 inch space in between cookies. Bake for 12-14 min or until slightly brown edges. It will be soft inside. Let the cookies cool to room temperature before removing the cookies. This makes a lot of cookies. You can freeze half of a portions for later time. I scoop lots of rounded cookie balls onto the baking sheet, put it the freezer , once it’s frozen I Place it in a gallon ziplock bag and put it back in the freezer. You do not need to defrost the cookie dough. Just bake it at same temperature just add a min or two to your time.
