Winter Brussel Sprouts Slaw

I decided not to do measurements for this salad because you can make of it as much as you like it’s so simple and it is one of those salads that doesn’t get gross after saying for awhile.

  • Brussel sprouts thinly sliced
  • Red onion fine chopped
  • Parsley chopped
  • Dried cranberries
  • Pomegranate
  • Goat cheese ( can use feta if you don’t like goat cheese )
  • Pumpkin seeds
  • 1 garlic clove
  • Olive oil
  • Balsamic vinegar
  • Sweet hot mustard
  • Salt / pepper

Make dressing , combine mustard, olive oil and balsamic vinegar. Add pressed garlic, season it with salt and pepper. Mix well, the dressing shouldn’t be runny it should be on the thicker side.

In a bowl combine , sliced Brussel sprouts , chopped onions , parsley, cranberries, pomegranate, pumpkin seeds. Goat cheese. Drizzle it with dressing, mix till all the ingredients are well coated. When serving sprinkles more goat cheese over it.
