Breakfast Frittata

Simple one pan breakfast for the whole family

  • 3 medium size potatoes, peeled and cut in small cubes
  • 5 slices of bacon, cut into same size as potatoes
  • 5 mushrooms thinly sliced
  • 1/3 of a sweet onion
  • 1 tea spoon of garlic salt seasoning
  • 5 eggs
  • 2 tea spoons cilantro or dill
  • 1/2 cup mozzarella cheese
  • 3 table spoons of butter

Instructions:

Heat a deep pan with butter, add chopped potatoes. Cover the lid let potatoes cook while you are cutting your bacon. Add bacon to the pan and cover the lid. Slice your mushrooms and onions. When your bacon and potatoes starts getting crispier that’s when you want to add your mushrooms and onions. Season it with garlic salt. Once your veggies look fully cooked and have a nice color on them you will add your eggs . Season the eggs with salt and pepper or garlic salt. Cover the lid and turn your heat to low. You want your eggs to be runny inside. When you see your eggs to turn all white take off the heat . Sprinkle with cheese cover the lid for about a min for the cheese to fully melt and sprinkle with cilantro before servings. Loosen the edges all around your pan , the Frittata should slice off easily into a platter.
