Roasted Chicken

( if you have different chicken lbs, add 1/2 tea spoon salt per pound )

4 lb chicken

Brine recipe:

2 tea spoons of salt

2 tea spoons of pepper

2 strings of thyme

1 Rosemary

2 tea spoons garlic powder

2 tea spoons of Coriander

1 tea spoon of sage

2 bay leafs

2 L Of water

Chicken coating:

1 stick of soft herb butter

6 cloves of garlic

2 tea spoons of salt

2 tea spoons of pepper

2 tea spoons of paprika

Stuffing:

1/2 large onion

1 lemon cut in half

Instructions:

In a pot combine all the brine ingredients, place your chicken in the pot. Brine for overnight or 24 hours

Pat your chicken dry with a paper towel. Let all the liquid drain.

Mix your soft butter with all the other ingredients. Spread all over the chicken. ( back , front , sides and inside.

Stuff your chicken with onions and lemon.

Place on to a roasting pan, bake at 425 for 1 hour and 30 min.
