Buckwheat Soup

My kids love anything buckwheat, this soup is so good, a full pot is gone in couple days. Not to mention buckwheat is so good for you. Here is my version of buckwheat soup


  • 1 cup of buckwheat
  • 3 chicken thighs
  • 5 medium size potatoes (pealed)
  • 1 large carrot
  • 1/2 of yellow onion
  • 1 garlic clove
  • 3 tea spoons of chopped dill
  • 1 tea spoon chopped parsley
  • 4 oz of homemade tomato veggie juice or Tomatoe/veggie V8
  • 4 oz of pickled tomatoe juice or Peperoncini juice
  • 2 bay leafs
  • 1/4 tea spoon turmeric
  • 2 tea spoons of salt
  • 1 tea spoons of pepper
  • 1 tea spoon of creole seasoning
  • 4 liters of water
  • 1 chicken bullion cube

Instructions: cooking time approx 30-40 min

In a pot of water, add cubed chicken thighs, bay leaf, salt, pepper and chicken bullion cube. Bring it to a boil. When the water is boiling you will see there will be white foam forming from the chicken, collect that and disregard it.

Chop potatoes into cubes and add to the pot. Turn the pot to medium heat.

Shred carrots , Fine chop onions and pressed garlic. In a skillet melt 2 tea spoons of butter and sauté your veggies. season lightly with salt and pepper. Add your sautéed veggies to the pot. Add turmeric and creole seasoning. Add 1 cup of buckwheat. Add tomato/veggie sauce or if you using a V8 add that. Add pickled juice, finish off your soup with fresh dill and parsley. Bring it to boil. When the buckwheat is doubled in size your soups is done. Taste to see if u need more salt or pepper to your taste.
