5 cups of sliced red potatoes
1 cups of milk
1/2 cup of heavy cream
2 garlic cloves
3 tea spoons of flour
Salt / pepper
4 table spoons of butter
1/2 cup of shredded Gouda cheese
1/2cup chipotle Gouda ( u can do 1 cups of regular Gouda and 1 tea spoon of chipotle seasoning )
1/2 cup of cheddar cheese
1/2 cup of Montreal jack cheese
1 tea spoon of creole seasoning
1 tea spoon cayenne pepper
Pre heat oven to 375
Soak your sliced potatoes in water.
In a pot , melt your butter add flour. Mix till flour is well incorporated with butter. Lower your heat and slowly pour in your milk and heavy cream. Add pressed garlic and your seasoning. Add all your cheeses and stir till all the cheese is melted and mixture is thickened.
Pour some of your mixture into a deep baking dish. Assemble your potatoes. Spread more mixture over the potatoes and repeat with another layer of potatoes. Keep building your layers till u run out of everything. Top Layer sprinkle with more cheddar cheddar. Cover with foil and bake for one hour. Remove the foil turn the heat to 425 and bake for additional 20 min or until top looks golden and cheese starts to crisp up. Every oven works different so after you turn of your heat keep watching it so it doesn’t burn. Let you Potatoes cool for about 10 min before serving.
A lot of times the bottom forms a crispy crust from the cheese, so that is our favorite part. I like to serve it up side down on each plate.
