This is so delicious. I am not not a big fan of heavy pasta salads . This salad is light and filled with all kind of healthy veggies.
Ingredients:
1 Baked beets
1 cup of cooked colorful pasta of your choice
1/2 cup of cut sugar snap peas
1 table spoon parsley
1/2 cup of cherry or grape tomatoes
3 table spoons or cut red onions
1 cup of fresh spinach
2 table spoons of dried cranberries
2 table spoons of toasted walnuts
4 table spoons of goat cheese ( you can use feta if you don’t like goat cheese )
Salad dressing:
4 table spoons of olive oil
3 table spoons of balsamic vinegar
2 table spoons of Agave syrup
1 table spoon of spicy mustard
1 garlic clove ( pressed)
Salt and pepper to taste
Instructions:
Bake your beats approximately at 350 for 1 hour.
Cook your pasta and rinse with cold water to stop the cooking process.
Cut your veggies around the same size.
Prep your dressing , whisking together all the dressing ingredients.
Add your spinach, pasta and all your other veggies in a bowl mix with dressing. Top your salad with cheese, nuts and cranberries .
