Ingredients:
- 10 medium Potatoes or 5 large potatoes
- Half onion
- 2 garlic cloves
- 1 tomato chopped
- 3 table spoons of butter
- 2 table spoons of flour
- 1 cup of white wine
- 1 cup of heavy cream
- 1 cup of chicken stock
- 1 tea spoon salt
- 1 tea spoon red pepper flakes
- 1 tea spoon black pepper
- 1/2 cup Parmesan cheese
- 1/2 cup of shredded cheddar
- 5 Chicken drumsticks
- Creole seasoning
- 3 table spoons of goat cheese
- 3 table spoons of Cheddar cheese for topping.
Instructions: pre heat oven to 400 degrees
- Season each side of chicken with creole seasoning and sauté in a skillet on each side.
- Remove chicken, add butter and onions to the skillet you were working with and sauté for few min.
- Add to the skillet tomatoes and garlic.
- Add flour and mix well till all well combined.
- Pour in your wine and chicken stock into the skillet. Season it well with salt and pepper.
- Let it cook for 4 min, till all the mixture starts to thicken. Stir in your heavy cream and 1/2 cup Parmesan cheese. Cook for couple more min.
- In an oven proof skillet or a deep baking dish. Pour a little bit of the sauce at the bottom of the baking dish.
- Assemble a row of thinly sliced potatoes. Pour a little sauce over those potatoes.
- Keep repeating, potato and sauce layers.
- When you are done with all the potatoes, place your sautéed drumsticks over the potatoes and lightly pour left over sauce over the drumsticks.
- Sprinkle the top with more Parmesan cheese and crumbled goat cheese. ( if you don’t like goat cheese you don’t have to use it or you can substitute it with feta, or fresh mozzarella. )
- Bake at 400 degrees covered with foil for 1 hour. Remove the foil and bake for additional 30 min.
- Remove from the oven and let it cool for 3-5 min.
