Chimichurri Lamb chops

Marinade for 8 piece lamb chop

Ingredients:

  • 1/2 red onion
  • 3 table spoons parsley ( half a of a bunch )
  • 3 table spoons cilantro ( half of a bunch )
  • 4 mint leaves
  • 2 strings if fresh oregano
  • 3 garlic cloves
  • Salt and pepper to taste
  • 1 cup of olive oil
  • 1 lemon squeezed
  • 2 tea spoons of vinegar
  • Lamb chops

Instructions:

  1. Using a food processor purée all the ingredients.
  2. Cover each lamb chop with Chimichurri sauce. Marinade for 30 min.
  3. Grill lamb chops the way you prefer. For medium rare . Cook 4 min on each side and cover to rest for 5 min:
