Braised Beef Short Ribs with Gnocchi

Ingredients:

  • 4 beef short ribs
  • 1/2 cup flour
  • 3 table spoons creole seasoning
  • 1 carrot
  • 1 onion
  • 3 garlic cloves
  • 2 cups of chicken stock
  • 1 cup of red wine
  • 1 can of fire roasted tomatoes
  • 2 table spoons of paprika
  • 1 table spoons of mustard powder
  • Salt and pepper to taste
  • 2 cups of water.
  • 1 tea spoon butter
  • 1-2 cup Parmesan cheese
  • Parsley for garnish
  • Instructions:
    1. Combine flour with creole seasoning.
      Dip each rib into flour and seasoning and sauté on each side till Golden brown in a deep skillet or pot.
      Chop onions and carrots, add to the pot.
      Add pressed garlic. Sauté till veggies get tender.
      Pour in wine, chicken stock and canned tomatoes and water.
      Add all the seasoning including salt and pepper. I like to taste my broth for salt. Approximately 1-2 tea spoons.
      Cover and cook for 2 hours.
      Boil water and cook gnocchi according to the package.
      Drain the water add tea spoon of butter and 1/2 cup of Parmesan cheese.
      How to serve it , use a deep pasta dish or bowl. Pour the sauce from the ribs on the bottom of the bowl, place gnocchi on top and top it with braised rib.
      Garnish it with parsley.
