Fluffy Pancakes



  1. Separate egg yolks from egg whites into two separate bowl. Beat egg whites till stiff peaks.
  2. in a cup heat two cups of milk with butter till butter is melted about one min to one min a half. Putting it with milk prevents butter from exploding in microwave, i also like to cover the cup with plastic wrap to guarantee mess free microwave.
  3. Into the egg yolks add sugar, vanilla, lemon juice, lemon zest , poppy seeds, flour, milk and butter. Also add baking powder. Whisk it all together till combined.
  4. Let the batter sit for 10 min to bubble up and baking powder to activate.
  5. Fold in the egg whites into the batter. Use a griddle or a non stick pan low to medium heat. Cook even size pancakes.
