Fluffy Pancakes
Ingredients
- 2 eggs
- 1/4 cups sugar
- 3 tbsp lemon juice lemon squeezed
- 1 tbsp lemon zest
- 1 tbsp vanilla extract
- 1 tbsp poppy seeds
- 2 cups milk warm
- 4 tsp butter melted
- 2 cups flour
- 4 tsp baking powder
Instructions
- Separate egg yolks from egg whites into two separate bowl.
Beat egg whites till stiff peaks.
- in a cup heat two cups of milk with butter till butter is melted about one min to one min a half. Putting it with milk prevents butter from exploding in microwave, i also like to cover the cup with plastic wrap to guarantee mess free microwave.
- Into the egg yolks add sugar, vanilla, lemon juice, lemon zest , poppy seeds, flour, milk and butter. Also add baking powder. Whisk it all together till combined.
- Let the batter sit for 10 min to bubble up and baking powder to activate.
- Fold in the egg whites into the batter. Use a griddle or a non stick pan low to medium heat. Cook even size pancakes.
