Fluffy Pancakes with Almond Flour and Regular Flour

A light hint of nutty flavor from almond flour , supper fluffy and moist pancakes your kids will love !
Ingredients
- 1 Cup Almond Flour
- 1 Cup All Purpose Flour
- 1 1/2 Cups Buttermilk
- 1/4 Cup Vegetable Oil Or any unflavored oil
- 1 Tea spoon Vanilla extract
- 2 Eggs
- 3 Tea spoons Baking powder
Instructions
- In a bowl combine all the ingredients and whisk till all the ingredients combined. Set aside and let it rest for minimum of 5 -10 min. When you will see that your batter has thickened on its own and created air pockets ( sort of of like bumbles ) that’s when the batter is ready . Any dough or batter you make needs to rest . For baking powder to activate.
- Turn on your stove to medium/low heat ( more towards the low side ) no need to butter or oil your pan because your batter has oil in it .
- I like to use a small ice cream scooper to scoop up my batter. I also use this amazing pan perfectly shaped for pancakes. My kids prefer the smaller size pancakes, but you can use a regular non stick pan and make whatever size of pancakes you would like.
- Cook your pancakes on lower heat approximately 2 min per side. Serve with honey , jam or pancake syrup. Enjoy !
