Ingredients
- 30 PHYLLO DOUGH BAKED SHELLS
- 6 EGGS
- 1/2 LB CREMINI OR WILD MUSHROOMS
- 6 SLICES BACON FRIED AND CHOPPED
- 1/2 SMALL ONION
- 1 tbsp BUTTER
- 1 GARLIC CLOVE PRESSED
- 1 CUP WILTED CHOPPED SPINACH
- 3 TBSP HEAVY CREAM
- 1/2 CUP MEXICAN CHEESE BLEND
- 1/2 CUP GOAT CHEESE ( CAN USE SOFT CREAM CHEESE INSTEAD)
- 1 TSP tbsp EACH SALT AND PEPPER
Instructions
- CHOP ONIONS AND MUSHROOMS, SAUTE WITH 1 TBSP OF BUTTER UNTIL CARAMELIZED. SEASON IT WITH SALT AND PEPPER.
- TO THE SKILLET ADD CHOPPED FRESH SPINACH TO WILT ABOUT TWO HAND FULLS.
- FRY BACON TILL CRISPY, PLACE ON TOP OF A PAPER TOWEL TO REMOVE ANY EXTRA GREASE. THEN CHOP BACON INTO SMALLER PIECES.
- PREHEAT OVEN TO 400 DEGREES
- IN A LARGE MIXING BOWL, BEAT SIX EGGS WITH HEAVY CREAM SALT AND PEPPER.
- TO THE EGG MIXTURE ADD MUSHROOMS AND ONIONS, CHOPPED SPINACH, CHOPPED BACON, MEXICAN CHEESE BLEND, GOAT (OR SOFT CREAM CHEESE)
- GIVE IT A NICE MIX SO EVERYTHING IS WELL INCORPORATED.
- FILL EACH SHELL WITH MIXTURE, BAKE AT 400 DEGREES FOR 15 MINUTES
